The A-Five Meats monthly subscription, called The Heritage Pack, is a curated selection of heritage bred beef.  This pack will always feature wagyu but is designed to provide some exploration and comparison into other breeds which may include Holstein, Scottish highland, Limousin, Angus, Galician style beef and more. Each month we will highlight  farms and offer both primal and offcuts: primal cuts (roughly 15% of the cow consisting of tenderloins, ribeyes, and t-bones); offcuts, the  “tastier cuts”  (flank, skirt, hanger, flat iron).  Our aim is to share the nuance and flavor that each breed has to offer while encouraging you to explore a variety of cooking styles as we utilize 100% of the animal. 

A-Five supports small farms and encourages sustainable eating by utilizing more of the animals we eat and thus evolving the culinary arts.

Farm Highlights
Santa Carota Beef: Take grass fed beef and allow the cows to finish with carrots. This creates a unique, juicy, healthy, and unforgettable tasting experience. Finishing the cows on carrots encourages sugar intake which in turn provides for enzymatic action allowing muscles to age well. 

Altair Wagyu: Typically wagyu is fed a range of proprietary blends of feed. It is rare to find wagyu that are grass fed but Altair has managed to blend the genetics to get an exceptionally diverse wagyu breed that can produce great marbling while being grass fed.
